Daniel Hong on the Processing of Tie Guan Yin

This was posted a while back but I wanted to share this great article by Daniel Hong of Hong Teas about the processing of Tie Guan Yin (TGY) tea. His stories and photos are fascinating, and anyone that has tried this wonderful tea will enjoy them.
